Banka Honey is one of the first experimental microlots to be produced within the Banka Co-operative in Menglian region. Banka consists of approximately 31 hectares of high-elevation farming land along with a wet mill, which services approximately 80 hectares of surrounding coffee land.
In the past three years, cherries from this area have been used to test new processing methods including experimental fermentation using yeast. For the Banka Honey, cherries were hand-picked then run through a wet optical colour sorter then fermented in cherry for two days. Next, the cherries were pulped with water and then spread and dried on raised beds inside a parabolic dryer.
Those who cupped the offer sample with us at London Coffee Festival were impressed with the quality and sweetness of this honey. As the majority of the coffee from Banka Co-operative is sold to specialty roasters in Australia, we are lucky to get our hands on a limited number of bags of this clean, well-structured and balanced coffee to share with a wider audience.
